Poached Chicken with Curry Sauce
Spice up your night with this creamy yellow chicken curry served with fluffy rice.

Ingredients
- 400g cooked rice
- 500g chicken breast
- 3 Tbs yellow curry paste
- 1 can light coconut milk
- 1 can light coconut cream
- 1 tsp curry powder
- 1 tsp brown sugar
- 1 bok choy, chopped
- 3 spring onions, sliced
- 2 tsp light soy sauce
- Chilli oil, to serve
Method
- Add 1 cup of rice and 2 cups of water to a small saucepan. Bring to a boil over high heat (with the lid on), then reduce the heat to low and simmer until all the water has evaporated and the rice is cooked (adding more water if necessary).
- Bring a large pot of water to a boil. Once boiling, add the chicken and cook for 10-15 minutes or until cooked through. Remove and slice.
- Heat a large non-stick frying pan over medium-high heat. Add the yellow curry paste and cook for 1-2 minutes until fragrant. Add the coconut cream, coconut milk, curry powder, and sugar. Simmer for 10-15 minutes or until thickened.
- Meanwhile, add the bok choy and spring onion to a large bowl with some water. Heat in the microwave for 4-5 minutes.
- Add the rice to bowls and top with soy sauce. Add the vegetables, chicken, and yellow curry sauce on top. Serve with chilli oil if desired. Enjoy!
