Ingredients
500gchicken breast or thighcut into bite-sized pieces
1teaspoonground cumin
1teaspoonpaprika
1teaspoondried oregano
½teaspoonchilli flakes
1tablespoonolive oil
1brown oniondiced
2garlic clovesminced
1tablespoontomato paste
1can400 g diced tomatoes
¼cupchicken stock
1can400 ml coconut milk
Fresh coriander or parsleyto serve
1limecut into wedges
400gcooked rice
200ggreen beanssteamed or sautéed
Instructions
Place the chicken in a bowl and coat with the cumin, paprika, oregano and chilli flakes.
Heat the olive oil in a large frying pan over medium-high heat. Add the chicken and cook until lightly browned on the outside. Remove from the pan and set aside.
Add the onion to the same pan and cook for 3–4 minutes until softened. Add the garlic and cook for a further minute.
Pour in the chicken stock and scrape up any browned bits from the bottom of the pan.
Stir in the tomato paste and diced tomatoes. Cook for 2–3 minutes.
Return the chicken to the pan and pour in the coconut milk. Stir to combine and simmer for about 5 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
Serve over cooked rice with green beans. Top with fresh coriander or parsley and a squeeze of lime.
