Sweet Chilli Pork Stir-Fry with Noodles

Ingredients

  • 1 tsp olive oil
  • 250 g snow peas sliced
  • 1 carrot thinly sliced
  • 1 zucchini sliced
  • 300 g mushrooms sliced
  • 1 capsicum sliced
  • 500 g lean pork mince
  • 2 cloves garlic minced
  • 4 Tbs sweet chilli sauce
  • 3 Tbs tamari
  • 250 g noodles

Instructions

  • Heat oil in a large non-stick frying pan. Add snow peas, carrot, zucchini, mushrooms, and capsicum. Fry with the lid on for 7-10 minutes, or until all vegetables are soft.
  • Meanwhile, cook the noodles according to the packet directions.
  • In a separate non-stick frying pan, cook the pork mince, garlic, sweet chilli sauce, and tamari/soy sauce for 5-7 minutes, or until the mince is cooked through. Once cooked, add the mince to the vegetables and stir through to combine.
  • Serve the pork mince and vegetables with udon noodles. Enjoy!

To keep this recipe closer to minimally processed foods, choose:
  • Sweet chilli sauce: Look for a short, simple ingredient list, ideally without artificial colours, flavours, preservatives or thickeners.
  • Tamari: naturally brewed tamari or soy sauce with a simple ingredient list.
  • Noodles: Choose noodles made with a few basic ingredients, such as wheat/rice flour, water and salt, and avoid varieties with lots of additives, flavour enhancers or emulsifiers.
