250gsnow peassliced
1carrotthinly sliced
1zucchinisliced
300gmushroomssliced
1capsicumsliced
500glean pork mince

4Tbssweet chilli sauce

Instructions
Heat oil in a large non-stick frying pan. Add snow peas, carrot, zucchini, mushrooms, and capsicum. Fry with the lid on for 7-10 minutes, or until all vegetables are soft.
Meanwhile, cook the noodles according to the packet directions.
In a separate non-stick frying pan, cook the pork mince, garlic, sweet chilli sauce, and tamari/soy sauce for 5-7 minutes, or until the mince is cooked through. Once cooked, add the mince to the vegetables and stir through to combine.
Serve the pork mince and vegetables with udon noodles. Enjoy!
