Steak with Sweet Potato Mash, Broccolini & Garlic Butter

A simple, nourishing steak dinner makes for an easy weeknight meal made with simple, minimally processed ingredients.

Ingredients

  • 500 g rump steak
  • 1 tbsp extra virgin olive oil
  • 800 g sweet potatoes peeled and chopped
  • 1 tbsp butter
  • 2 bunches broccolini
  • 4 tbsp butter softened
  • 2 garlic clove finely grated or minced
  • 2 tbsp finely chopped fresh parsley

Instructions

  • Place the chopped sweet potato in a saucepan of salted water. Bring to a boil and cook for 12–15 minutes, or until tender. Drain well.
  • Return the sweet potato to the saucepan and mash with the butter and a pinch of salt until smooth and creamy. Keep warm.
  • Mix the softened butter, garlic, parsley and a pinch of salt together until well combined. Set aside.
  • Bring a saucepan of water to the boil. Add the broccolini and cook for 2–3 minutes, or until bright green and just tender. Drain well.
  • Pat the steaks dry and season generously with salt and black pepper. Heat a frying pan or grill pan over high heat. Add the olive oil and cook the steaks for approximately 2–4 minutes per side for medium-rare, depending on thickness and preference.
  • Transfer the steaks to a plate and rest for 5 minutes. Slice.
  • Divide the sweet potato mash and broccolini between plates. Top steak pieces with a spoonful of garlic butter and serve immediately.
