Spaghetti Bolognese

This veggie-loaded spaghetti bolognese make for the perfect quick and easy weeknight dinner.

Ingredients

  • 500 g beef mince
  • 300 g frozen carrot corn, peas
  • 1 can diced tomatoes
  • 2 Tbsp tomato paste
  • 1 tsp Italian herbs
  • 1/2 cup beef stock
  • 250 g spaghetti
  • Parmesan to serve

Instructions

  • Heat oil or a non-stick fry pan over medium-high heat. Add beef mince, cooking for 5-7 minutes, breaking up with a spoon until browned.
  • Add carrot, corn & peas, diced tomatoes, tomato paste, Italian herbs, and beef stock to the pan. Stir to combine and simmer for 5-10 minutes.
  • Spoon into Souper Cube trays and freeze.
  • To reheat, drop cubes into pan, break apart as it melts into sauce. Serve over pasta and top with parmesan. Enjoy!
