Spaghetti Bolognese
This veggie-loaded spaghetti bolognese make for the perfect quick and easy weeknight dinner.

- 500 g beef mince
- 300 g frozen carrot corn, peas
- 1 can diced tomatoes
- 2 Tbsp tomato paste
- 1 tsp Italian herbs
- 1/2 cup beef stock
- 250 g spaghetti
- Parmesan to serve
Heat oil or a non-stick fry pan over medium-high heat. Add beef mince, cooking for 5-7 minutes, breaking up with a spoon until browned.
Add carrot, corn & peas, diced tomatoes, tomato paste, Italian herbs, and beef stock to the pan. Stir to combine and simmer for 5-10 minutes.
Spoon into Souper Cube trays and freeze.
To reheat, drop cubes into pan, break apart as it melts into sauce. Serve over pasta and top with parmesan. Enjoy!
