Quick Tuna Fish Cakes

- 500 g thawed mashed potato
- 1 large tin tuna drained
- 1 tablespoon chopped herbs fresh or dried
- Zest of 1 lemon
- Olive oil
Mix the mash, tuna, herbs and lemon zest together in a bowl.
Shape into small patties.
Heat a little olive oil in a frying pan over medium heat.
Cook the fish cakes for 3–4 minutes each side until golden and crispy.
Serve with salad or frozen vegetables.
