Quick Tuna Fish Cakes

Ingredients

  • 500 g frozen mashed potato
  • 425 g large tin tuna drained
  • 1 tablespoon Italian herbs fresh or dried
  • Olive oil

Instructions

  • Cook the mash according to packet directions.
  • Mix the mash, tuna, and herbs together in a bowl. Shape into small patties.
  • Heat a little olive oil in a frying pan over medium heat.
  • Cook the fish cakes for 3–4 minutes each side until golden and crispy.
  • Serve with salad or frozen vegetables.
  • Tip: A spoonful of sweet chilli makes a delicious sauce.
