Quick Tuna Fish Cakes

- 500 g frozen mashed potato
- 425 g large tin tuna drained
- 1 tablespoon Italian herbs fresh or dried
- Olive oil
Cook the mash according to packet directions.
Mix the mash, tuna, and herbs together in a bowl. Shape into small patties.
Heat a little olive oil in a frying pan over medium heat.
Cook the fish cakes for 3–4 minutes each side until golden and crispy.
Serve with salad or frozen vegetables.
Tip: A spoonful of sweet chilli makes a delicious sauce.
