Pork & Basil Stir Fry

A delicious and savoury stir-fry featuring pork mince, fresh basil, and crunchy veggies, topped with a perfectly fried egg.

Ingredients

  • 500 g pork mince
  • 1/2 tsp chilli flakes
  • 2 cloves garlic crushed
  • 1 brown onion diced
  • 1 zucchini sliced
  • 200 g green beans halved
  • 1/2 tsp white pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp fennel seeds
  • 1 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp vinegar
  • 2 Tbsp chicken stock
  • 1 large bunch basil or Thai basil
  • 4 eggs
  • 4 tsp chilli oil

Instructions

  • Heat a large non-stick fry pan or wok over medium-high heat. Sauté the garlic, chilli, and onion for 3 minutes, or until softened.
  • Add the mince and cook for 3-5 minutes, or until almost cooked through. Add the white pepper, cumin, fennel seeds, zucchini, and green beans. Cook for 5-7 minutes, or until softened.
  • Add the soy sauce, fish sauce, vinegar, and chicken stock, and continue to cook until the sauce reduces.
  • Add the basil and turn off the heat. Meanwhile, fry the eggs in chilli oil until cooked to your liking.
  • Serve the pork mince and basil mixture with the egg on top. Enjoy!

  • Soy sauce: Choose a naturally brewed soy sauce with a short ingredient list, ideally without added flavours, colours or preservatives.
  • Fish sauce: Look for a traditional fish sauce made primarily from anchovies, salt and water, without unnecessary additives.
  • Chicken stock: Choose a simple chicken stock with recognisable ingredients, or use homemade stock where possible.
  • Chilli oil: Opt for chilli oil made with simple ingredients such as chilli, oil and spices, avoiding added emulsifiers, artificial flavours and colours.
