Parsley Lime Chicken Bowls

These easy chicken bowls are fresh, flavourful, and a little more exciting than the usual weeknight meal. They're simple to throw together, packed with flavour, and perfect for an easy weeknight dinner!

Ingredients

  • Chicken:
  • 500 g chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp soy sauce/tamari
  • ½ tbsp cumin
  • 1/2 tsp chilli flakes
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley finely chopped
  • 1 garlic clove minced
  • Juice of 1 lime
  • 2 tsp salt
  • ½ tsp black pepper
  • Parsley Green Sauce:
  • ¼ cup mayonnaise
  • ½ cup Greek yoghurt
  • 3 garlic cloves
  • 1 large bunch fresh parsley
  • 2 spring onions
  • Jalapeños to taste
  • Juice of 2 limes
  • Drizzle of olive oil
  • Salt and black pepper to taste
  • Bowl Ingredients:
  • 400 g cooked rice
  • 160 g corn kernels
  • 40 g black beans
  • 100 g cherry tomatoes
  • 40 g red onion
  • Parsley green sauce
  • Grilled parsley lime chicken

Instructions

  • Add the olive oil, tamari, cumin, chilli flakes, garlic powder, parsley, minced garlic, lime juice, salt, and pepper to a bowl and mix well.
  • Add the chicken thighs and toss until well coated.
  • Cover and marinate for at least 1 hour.
  • Meanwhile, add the mayonnaise, Greek yoghurt, garlic, parsley, green onions, jalapeño, lime juice, olive oil, salt, and pepper to a blender or food processor.
  • Blend until smooth and creamy, or until you reach your preferred consistency.
  • Taste and adjust the salt, pepper, lime juice, or olive oil as needed.
  • Grill the chicken over medium-high heat until cooked through and lightly charred on the outside.
  • Let the chicken rest for a few minutes, then slice or chop into bite-sized pieces.
  • Add rice to each bowl and top with black beans, corn, tomato, red onion and grilled chicken. Drizzle generously with the parsley green sauce and serve with extra lime wedges if desired. Enjoy!
