Preheat the oven to 180°C.
Heat the olive oil in a large oven-safe pot over medium heat. Season the chicken thighs generously.
Place the chicken in the pot and cook for 3–5 minutes, until golden brown. Flip and cook for another 2–3 minutes. Remove the chicken from the pot and set aside.
Reduce the heat slightly and melt the butter in the same pot. Add the onion and garlic and sauté until softened and translucent.
Add the Arborio rice and stir for 1–2 minutes, until the grains begin to turn from white to translucent.
Pour in the white wine and cook for 2–3 minutes, stirring occasionally, until most of the wine has evaporated.
Add the chicken stock and milk. Season with salt and pepper, then bring the mixture to a gentle simmer.
Stir well, then nestle the chicken thighs back into the risotto.
Cover the pot with a lid and transfer to the oven. Cook for 20 minutes.
Remove the lid and continue cooking for another 10 minutes, or until the chicken is cooked through and the risotto is creamy and tender.
Remove from the oven and stir through plenty of grated Parmesan and fresh parsley.
Serve immediately with green beans or your favourite vegetables.
