Nacho Bowl

This nacho salad recipe with creamy salsa dressing is a fun upgrade to your usual salad.

Ingredients
  

  • 80 g sour cream
  • 50 g tomato salsa
  • 1/2 small lime juiced
  • Sriracha
  • 500 g beef mince
  • 130 g taco seasoning
  • 120 g black beans drained
  • 200 g lettuce shredded
  • 80 g red onion finely diced
  • 2 tomatoes diced
  • 80 g shredded cheese
  • 80 g tortilla strips
  • Jalapenos and coriander to serve

Method
 

  1. Add sour cream, salsa, lime juice, and sriracha (to your liking) to a small bowl. Mix well and set aside.
  2. Heat a large non-stick frying pan and cook the beef mince for approximately 5–7 minutes, or until cooked through. Add taco seasoning halfway through, mixing well. Once the beef is cooked, stir in the black beans and cook until heated through.
  3. In a serving bowl, add the lettuce, red onion, tomato, and beef mince mixture. Top with cheese and tortilla strips. Finish with coriander, jalapeños, and the creamy salsa dressing. Enjoy!
