Maple Cinnamon Granola

A simple, crunchy homemade granola. This recipe is golden, lightly spiced and ready in around 20 minutes.

Ingredients

  • cups rolled oats
  • ½ cup mixed nuts roughly chopped
  • ½ cup shredded coconut
  • ½ tsp cinnamon
  • ¼ tsp salt
  • cup macadamia oil
  • cup maple syrup
  • 1 tsp vanilla extract
  • ¼ cup sultanas or cranberries

Instructions

  • Preheat oven to 160°C fan forced and line a baking tray with baking paper.
  • In a large bowl, mix oats, nuts, coconut flakes, cinnamon and salt.
  • Whisk together oil, maple syrup and vanilla.
  • Pour over the oat mixture and stir until everything is evenly coated.
  • Spread evenly on the tray (press down slightly if you like bigger clusters).
  • Bake for 15-20 minutes, stirring halfway, until golden and fragrant.
  • Allow to cool completely - it will crisp up as it cools.
  • Stir through sultanas/cranberries once cooled.

  • Rolled oats: Plain rolled oats with no added flavours, sugars or other ingredients.
  • Nuts: Unsalted, plain nuts without added oils, coatings or flavourings.
  • Coconut flakes: Unsweetened coconut flakes.
  • Macadamia oil: A simple macadamia oil with no added ingredients.
  • Maple syrup: 100% pure maple syrup rather than maple-flavoured syrup.
  • Dried cranberries: Choose unsweetened or minimally processed cranberries where available, as many varieties contain added sugar or other ingredients.
  • Vanilla: Pure vanilla extract rather than vanilla-flavoured syrups or imitation products, if preferred.
