Loaded Beef Nachos

A high volume beef nachos makes for the perfect high protein and fibre lunch or dinner meal.

Ingredients

  • 500 g lean beef mince
  • 1 Tbs taco seasoning
  • 1 zucchini grated
  • 1 carrot grated
  • 2 tomatoes diced
  • 1 avocado mashed
  • Handful of baby spinach
  • 4 Tbs salsa
  • Cheese shredded
  • JalapeƱos diced
  • 200 g corn chips

Instructions

  • Heat a large fry pan over medium-high heat. Add beef mince and taco seasoning, mix well, and cook for 5-7 mins or until just browned. Add zucchini and carrot and cook for a further 3-5 minutes or until softened. Remove from heat and set aside.
  • To a serving bowl, add spinach, beef mince mixture, and tomatoes. Top with avocado, cheese, salsa, and jalapeƱos. Serve with corn chips. Enjoy!
