500glean beef mince
1Tbstaco seasoning
1zucchinigrated
1carrotgrated
2tomatoesdiced
1avocadomashed
Handful of baby spinach
4Tbssalsa
Cheeseshredded
JalapeƱosdiced
200gcorn chips
Instructions
Heat a large fry pan over medium-high heat. Add beef mince and taco seasoning, mix well, and cook for 5-7 mins or until just browned. Add zucchini and carrot and cook for a further 3-5 minutes or until softened. Remove from heat and set aside.
To a serving bowl, add spinach, beef mince mixture, and tomatoes. Top with avocado, cheese, salsa, and jalapeƱos. Serve with corn chips. Enjoy!
