Ingredients

  • 400 g cooked rice
  • 2 spring onions sliced
  • 1 tsp rice wine vinegar
  • 1 Tbs tahini
  • 3 Tbs tamari
  • 1.5 Tbs brown sugar
  • 1 tsp sriracha
  • 1 tsp extra virgin olive oil
  • 1 zucchini cut into half moons
  • 200 g mushrooms sliced
  • 1 carrot grated
  • 1 tsp garlic crushed
  • 1 tsp ginger crushed
  • 500 g extra lean beef mince

Instructions

  • Add 1 cup of rice and 2 cups of water to a small saucepan. Bring to a boil over high heat (with the lid on), then reduce the heat to low and simmer until all the water has evaporated and the rice is cooked (adding more water if necessary).
  • Add the spring onions to a small bowl with the vinegar and a pinch of salt. Top with water to cover the onions. Set aside to marinate.
  • In a separate small bowl, stir together tahini, 1.5 tablespoons of soy sauce, sugar, and sriracha.
  • Heat oil in a large frying pan over medium-high heat. Add zucchini and mushrooms and cook (with the lid on) for 5-7 minutes, or until softened. Add the carrot and continue to cook for a further 2-4 minutes. Season with salt and pepper. Remove from the pan and set aside.
  • Add garlic and ginger to the pan and cook until fragrant, about 30 seconds. Add the beef mince, breaking it up, and cook for 5-7 minutes, or until just cooked through. Add the remaining soy sauce and cook for a further 1-2 minutes, or until mostly evaporated.
  • Divide the rice between bowls. Top with the zucchini mixture and beef. Drizzle with sauce and top with spring onions. Add extra sriracha if desired. Enjoy!

Notes

UPF-Friendly Swaps
To keep this recipe closer to minimally processed foods, choose:
  • Rice: Choose plain rice with no added oils, flavourings or seasoning. If using microwave rice, check that the ingredients are simply rice and water where possible.
  • Tahini: Choose tahini made from 100% sesame seeds, without added oils, sugar or emulsifiers.
  • Soy sauce: Look for a soy sauce with a simple ingredient list. For a gluten-free option, choose tamari labelled gluten-free and check for unnecessary additives.
  • Sriracha: Check for a chilli-based sauce with a simple ingredient list. Some brands contain added sugars, preservatives, thickeners and flavour enhancers.
  • Garlic: Use fresh garlic, crushed at home, or a jarred option with minimal ingredients and no unnecessary additives.
  • Ginger: Use fresh ginger, grated or crushed at home, or choose a jarred version with a simple ingredient list.
Always check ingredient labels, as brands vary.
