A quick and easy beef stir-fry packed with colourful vegetables and tossed in a simple sweet and savoury sauce. Perfect for a weeknight dinner and delicious served with noodles.

Ingredients
500gbeef mince
1tablespoonolive oil
2garlic clovesminced
1teaspoongrated fresh ginger
1carrotgrated
1zucchinidiced
1red capsicumsliced
1broccoli
2tablespoonssoy sauce or tamari
1tablespoonhoney
1tablespoonrice vinegar
1teaspoonsesame oil
250gnoodlescooked, to serve

Instructions
Heat the olive oil in a large frying pan over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until browned.
Add the garlic and ginger and cook for 1 minute, stirring until fragrant.
Add the carrot, zucchini, capsicum and broccoli. Stir-fry for 5–7 minutes, or until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, honey, rice vinegar and sesame oil.
Pour the sauce over the beef and vegetables. Toss well and cook for a further 1–2 minutes, until everything is coated and heated through.
Serve the stir-fry with cooked noodles and finish with sesame seeds and sliced spring onion, if desired.
