Honey Soy Beef & Veggie Noodle Stir Fry

A quick and easy beef stir-fry packed with colourful vegetables and tossed in a simple sweet and savoury sauce. Perfect for a weeknight dinner and delicious served with noodles.

Ingredients

  • 500 g beef mince
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 1 carrot grated
  • 1 zucchini diced
  • 1 red capsicum sliced
  • 1 broccoli
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 250 g noodles cooked, to serve
  • Sesame seeds optional
  • Spring onion sliced, optional

Instructions

  • Heat the olive oil in a large frying pan over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until browned.
  • Add the garlic and ginger and cook for 1 minute, stirring until fragrant.
  • Add the carrot, zucchini, capsicum and broccoli. Stir-fry for 5–7 minutes, or until the vegetables are tender-crisp.
  • In a small bowl, whisk together the soy sauce, honey, rice vinegar and sesame oil.
  • Pour the sauce over the beef and vegetables. Toss well and cook for a further 1–2 minutes, until everything is coated and heated through.
  • Serve the stir-fry with cooked noodles and finish with sesame seeds and sliced spring onion, if desired.

  • Soy sauce: Choose a soy sauce or tamari with a short ingredient list and no added flavour enhancers, or use coconut aminos.
  • Honey: Use pure honey with no added syrups or other ingredients.
  • Sesame oil: Choose 100% toasted or regular sesame oil without added flavourings.
  • Noodles: Look for noodles made with simple ingredients such as wheat, rice or egg.
