700gbaby potatoeshalved
2Tbspolive oil
2Tbsphoney
2garlic clovescrushed
1Tbssoy sauce or tamari
1tspdijon mustard
200ggreen beans
1broccoli
Instructions
Preheat the oven to 200°C.
Toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a large baking tray and roast for 20 minutes.
Meanwhile, whisk together the honey, crushed garlic, tamari, and Dijon mustard.
Remove the tray from the oven and push the potatoes to one side. Place the salmon fillets on the tray and brush generously with the honey garlic glaze.
Add the green beans and broccoli to the tray and season lightly with salt and pepper.
Return the tray to the oven and bake for 10–12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Spoon any remaining glaze from the tray over the salmon before serving. Enjoy!
