Honey Garlic Salmon with Roasted Potatoes

This easy salmon dish is a complete one-pan dinner, perfect for busy weeknights with minimal cleanup.

Ingredients

  • 4 salmon fillets
  • 700g baby potatoes halved
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 2 garlic cloves crushed
  • 1 Tbs soy sauce or tamari
  • 1 tsp dijon mustard
  • 200g green beans
  • 1 broccoli

Instructions

  • Preheat the oven to 200°C.
  • Toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a large baking tray and roast for 20 minutes.
  • Meanwhile, whisk together the honey, crushed garlic, tamari, and Dijon mustard.
  • Remove the tray from the oven and push the potatoes to one side. Place the salmon fillets on the tray and brush generously with the honey garlic glaze.
  • Add the green beans and broccoli to the tray and season lightly with salt and pepper.
  • Return the tray to the oven and bake for 10–12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  • Spoon any remaining glaze from the tray over the salmon before serving. Enjoy!
