Express Egg Fried Rice
A speedy fried rice using freezer shortcuts and pantry staples.

Ingredients
2
microwavable rice pouches
1
cup
frozen sofrito mix
1
tsp
garlic
1
tsp
ginger
4
eggs
Soy sauce
Sesame oil
Instructions
Heat a little oil in a wok or large frying pan over high heat.
Add the sofrito mix and garlic and ginger. Cook for 2 minutes.
Add the rice and break up any clumps. Fry for 3 minutes.
Push the rice to one side of the pan and crack in the eggs. Scramble until cooked.
Stir everything together with a splash of soy sauce and a drizzle of sesame oil.
Serve hot and enjoy!
