Express Egg Fried Rice

A speedy fried rice using freezer shortcuts and pantry staples.

Ingredients

  • 2 microwavable rice pouches
  • 1 cup frozen sofrito mix
  • 1 tsp garlic
  • 1 tsp ginger
  • 4 eggs
  • Soy sauce
  • Sesame oil

Instructions

  • Heat a little oil in a wok or large frying pan over high heat.
  • Add the sofrito mix and garlic and ginger. Cook for 2 minutes.
  • Add the rice and break up any clumps. Fry for 3 minutes.
  • Push the rice to one side of the pan and crack in the eggs. Scramble until cooked.
  • Stir everything together with a splash of soy sauce and a drizzle of sesame oil.
  • Serve hot and enjoy!
