Egg, Tomato & Goat Cheese Toast

A simple, fresh and satisfying breakfast featuring crispy sourdough topped with creamy goat cheese, juicy cherry tomatoes and fragrant basil, served with protein-rich boiled eggs.

Ingredients

  • 2 slices sourdough bread
  • 50 g goat cheese
  • ½ cup cherry tomatoes halved
  • ¼ cup fresh basil leaves
  • 2 eggs
  • Salt and black pepper to taste
  • 1 tsp olive oil

Instructions

  • Boil the eggs to your preferred doneness. Cool slightly, peel and slice.
  • Toast the sourdough slices until golden and crisp.
  • Spread the goat cheese generously over the toasted sourdough.
  • Top with the halved cherry tomatoes and fresh basil.
  • Season with salt and black pepper and drizzle with olive oil.
  • Serve with the sliced boiled eggs on top or alongside. Enjoy!
