A quick and comforting chicken korma made with Urban Eats Korma Indian Meal Kit.

Ingredients
500gchicken breast or thighcut into bite-sized pieces
1pack Urban Eats Korma Curry
400gfrozen mixed winter vegetables
1tspextra virgin olive oil
1cupbasmati rice
Fresh corianderto serve
Plain Greek yoghurtoptional, to serve
Instructions
Add the rice and 2 cups of water to a saucepan. Bring to a boil over high heat. Once boiling, reduce heat to low and cook until water has evaporated and rice is cooked.
Heat the olive oil in a large frying pan over medium-high heat. Add the chicken and cook for 4–5 minutes, turning occasionally, until lightly golden.
Add the frozen mixed winter vegetables directly to the pan. Cook for 4–5 minutes, stirring occasionally, until heated through.
Pour the Urban Eats Korma Curry over the chicken and vegetables and stir well to combine.
Reduce the heat and simmer for 8–10 minutes, stirring occasionally, until the chicken is completely cooked through and the vegetables are tender.
Spoon the korma over basmati rice and garnish with fresh coriander. Serve with a spoonful of plain Greek yoghurt, if desired. Enjoy!
