Easy Chicken Korma

A quick and comforting chicken korma made with Urban Eats Korma Indian Meal Kit.

Ingredients

  • 500 g chicken breast or thigh cut into bite-sized pieces
  • 1 pack Urban Eats Korma Curry
  • 400 g frozen mixed winter vegetables
  • 1 tsp extra virgin olive oil
  • 1 cup basmati rice
  • Fresh coriander to serve
  • Plain Greek yoghurt optional, to serve

Instructions

  • Add the rice and 2 cups of water to a saucepan. Bring to a boil over high heat. Once boiling, reduce heat to low and cook until water has evaporated and rice is cooked.
  • Heat the olive oil in a large frying pan over medium-high heat. Add the chicken and cook for 4–5 minutes, turning occasionally, until lightly golden.
  • Add the frozen mixed winter vegetables directly to the pan. Cook for 4–5 minutes, stirring occasionally, until heated through.
  • Pour the Urban Eats Korma Curry over the chicken and vegetables and stir well to combine.
  • Reduce the heat and simmer for 8–10 minutes, stirring occasionally, until the chicken is completely cooked through and the vegetables are tender.
  • Spoon the korma over basmati rice and garnish with fresh coriander. Serve with a spoonful of plain Greek yoghurt, if desired. Enjoy!
