Easy Butter Chicken

A quick and easy family dinner made with Spice Tailor recipe base, tender chicken, rice, mixed vegetables and warm naan bread.

Ingredients

  • 1 packet Spice Tailor Butter Chicken
  • 500 g chicken breast or thigh cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup uncooked basmati rice
  • 2 cups frozen mixed winter vegetables
  • 4 naan breads
  • Fresh coriander optional

Instructions

  • Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until lightly browned and cooked through.
  • Add the Spice Tailor Butter Chicken sauce and accompanying ingredients from the packet to the pan. Reduce the heat and simmer for 5–10 minutes, stirring occasionally, until the sauce is hot and the chicken is completely cooked through.
  • Meanwhile, add rice and 2 cups of water to a small saucepan. Bring to the boil. Once boiling, reduce heat to low and simmer (with lid on) until all the liquid has evaporated and rice is cooked.
  • Microwave or steam the frozen mixed vegetables until hot and tender. Warm the naan breads according to the packet instructions.
  • Serve the butter chicken with rice, vegetables, and naan bread. Garnish with fresh coriander, if desired. Enjoy!
