Slice the chicken breast into even-sized strips or use chicken tenderloins. Pat dry with paper towel.
Place the flour in one shallow bowl and whisk the eggs in a second bowl. In a third bowl, combine the breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
Dip each piece of chicken into the flour, shaking off any excess. Dip into the beaten egg, then press into the seasoned breadcrumbs until evenly coated.
Heat the oil in a large frying pan over medium heat. Cook the chicken tenders in batches for 3–5 minutes per side, depending on thickness, until golden and cooked through.
Meanwhile, bring a large pot of water to a boil. Add the broccolini and corn cobs and cook for 5–7 minutes, or until tender. Drain well.
Add the Greek yoghurt, honey, Dijon mustard, garlic powder, lemon juice, and salt to a small bowl. Stir until smooth and creamy.
Arrange the crumbed chicken tenders, broccolini, and corn on the cob on plates. Serve with the honey mustard yoghurt sauce for dipping and fresh lemon wedges on the side. Enjoy!
