Ingredients

  • 300 g macaroni pasta
  • 250 g cottage cheese
  • ½ cup milk
  • 1 cup grated cheese
  • 1 tablespoon butter
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sweet paprika
  • Salt and pepper to taste
  • ½ cup reserved pasta water
  • ½ cup cooked sweet potato

Instructions

  • Cook the macaroni according to the packet directions. Before draining, reserve ½ cup of the pasta water.
  • Add the cooked sweet potato, cottage cheese, milk, garlic powder, onion powder and sweet paprika to a blender. Blend until completely smooth.
  • Melt the butter in the saucepan over low heat.
  • Add the blended mixture and grated cheese to the saucepan. Stir gently until the cheese has melted and the sauce is smooth.
  • Gradually add the reserved pasta water, a little at a time, until the sauce is silky and creamy.
  • Stir through the cooked macaroni and season with salt and pepper to taste.
