Creamy Mac & Cheese
A creamy, comforting mac and cheese with a simple hidden veggie twist. Cottage cheese and sweet potato create a smooth, rich sauce.

- 300 g macaroni pasta
- 250 g cottage cheese
- ½ cup milk
- 1 cup grated cheese
- 1 tablespoon butter
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sweet paprika
- Salt and pepper to taste
- ½ cup reserved pasta water
- ½ cup cooked sweet potato
Cook the macaroni according to the packet directions. Before draining, reserve ½ cup of the pasta water.
Add the cooked sweet potato, cottage cheese, milk, garlic powder, onion powder and sweet paprika to a blender. Blend until completely smooth.
Melt the butter in the saucepan over low heat.
Add the blended mixture and grated cheese to the saucepan. Stir gently until the cheese has melted and the sauce is smooth.
Gradually add the reserved pasta water, a little at a time, until the sauce is silky and creamy.
Stir through the cooked macaroni and season with salt and pepper to taste.
