Choc Chip Lactation Cookies

A little snack I love having on hand while breastfeeding. They’re quick, easy, made in one blender and perfect for when you need something to grab between feeds.

Ingredients

  • 1 cup rolled oats
  • 1 ripe banana
  • ½ cup almond or peanut butter
  • 2 tbsp ground flaxseed
  • 1 –2 tbsp brewer’s yeast optional
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • ¼ tsp baking powder
  • ¼ cup chocolate chips
  • 1 –2 tbsp milk only if needed

Instructions

  • Preheat oven to 175°C and line a baking tray.
  • Add oats to your Vitamix and pulse until they resemble a coarse flour.
  • Add banana, nut butter, flaxseed, brewer’s yeast, sweetener, vanilla, cinnamon and baking powder.
  • Blend until a thick dough forms. Add milk 1 tbsp at a time if needed.
  • Stir through chocolate chips.
  • Scoop into 10–12 portions, flatten slightly and place on the tray.
  • Bake for 10–13 minutes, until lightly golden around the edges.
  • Cool for 10 minutes, then enjoy!

To keep this recipe closer to minimally processed foods, choose:
  • Oats → Choose plain rolled oats with oats as the only ingredient.
  • Almond or peanut butter → Choose 100% nuts, or nuts + a little salt, with no added sugar or oils.
  • Flaxseed → Choose plain ground flaxseed with no added ingredients.
  • Maple syrup or honey → Use pure maple syrup or 100% honey, with no added sweeteners or flavourings.
  • Vanilla → Choose pure vanilla extract rather than vanilla-flavoured syrup or imitation vanilla.
  • Chocolate chips → Swap for chopped dark chocolate with a short ingredient list and a high cocoa percentage, or cacao nibs for a less sweet option.
  • Milk → Use plain dairy milk or an unsweetened plant milk with minimal ingredients.
