Enjoy a little bit of spice with these delicious chilli and garlic prawns served with rice and vegetables. Quick, fresh and packed with flavour, this is an easy weeknight dinner the whole family can enjoy.

Ingredients
400gcooked rice
500gprawnspeeled
150gsnow peassliced
100gcarrotssliced
2tbspextra virgin olive oil
4clovesgarliccrushed
½tspchilli flakes
½tspsalt
⅓cuplemon juice
2tbspfresh parsleychopped
2spring onionssliced
Instructions
Add the rice and 2 cups of water to a small saucepan. Bring to the boil over high heat with the lid on, then reduce the heat to low and simmer until the water has evaporated and the rice is cooked. Add a little more water if needed.
Meanwhile, bring a small pot of water to the boil. Add the snow peas and carrots and cook for 5 minutes. Drain and set aside.
Heat the olive oil in a large frying pan over medium heat. Add the garlic, chilli flakes and salt and cook for around 30 seconds, or until fragrant.
Add the prawns and cook for 2–3 minutes, or until cooked through.
Remove from the heat and stir through the lemon juice and parsley.
Serve the chilli garlic prawns with the brown rice, snow peas and carrots. Top with sliced spring onions and enjoy!
