Instructions
Grate the zucchini and squeeze out as much excess moisture as possible using clean hands or a clean tea towel.
In a large bowl, combine the chicken mince, grated zucchini, egg and ½ cup rolled oats. Mix until well combined. Leave to rest for 5 minutes to allow the oats to absorb some moisture. If the mixture is too wet to shape, add more oats, 1 tablespoon at a time. Shape into ~16 patties, , flattening them slightly so they cook evenly.
Heat the olive oil in a large non-stick frying pan over medium-low heat. Cook the fritters in batches for 4–5 minutes per side, adjusting the heat as needed to prevent them from browning too quickly.
Serve the fritters topped with crumbled feta, chilli oil, parsley and lemon juice. Serve alongside potatoes and broccolini. Enjoy!

UPF-Friendly SwapsTo keep this recipe closer to minimally processed foods, choose:
Rolled oats: Choose plain, unflavoured rolled oats rather than flavoured or sweetened instant oats.
Feta: Choose feta made with simple ingredients, such as milk, salt, cultures and rennet.
Chilli oil: Choose one made with a short ingredient list, or make your own using olive oil and chilli.
