Chicken Fajita Bowl

A fresh, flavour-packed meal featuring seasoned chicken, sautéed capsicum, fluffy rice, and your favourite toppings.

Ingredients

  • 1 cup uncooked rice
  • 500 g chicken thigh diced
  • 1 Mingle Mexican Fajita recipe base
  • 1 red onion finely diced
  • 1 capsicum finely diced
  • 400 g canned tomatoes
  • 40 g cheese shredded
  • 1 Avocado mashed
  • 4 Tbs mayonnaise
  • Chilli oil

Instructions

  • Add 1 cup of rice and 2 cups of water to a small saucepan. Bring to the boil over high heat (with lid on) and then reduce heat to low and simmer until all water has evaporated and rice is cooked (adding more water if necessary).
  • Heat a large oven-safe fry pan over medium-high heat and preheat your grill to high.
  • Slice the chicken thighs into strips. Toss with the Mingle Mexican Fajita seasoning and cook for 6–8 minutes until browned and almost cooked through.
  • Add the red onion and capsicum. Cook for 4–5 minutes until just tender.
  • Stir through the canned tomatoes and cooked rice, cooking for 2–3 minutes until everything is heated through.
  • Sprinkle over the shredded cheese and place under the grill for 2–3 minutes until melted and bubbling.
  • Meanwhile, whisk together the mayonnaise and chilli oil.
  • Remove from the heat and top with mashed avocado, and a drizzle of chilli mayo. Enjoy!

  • Mayonnaise: Look for mayonnaise made with simple ingredients such as oil, egg, vinegar, and mustard, with no artificial additives. 
  • Chilli oil:Choose a chilli oil made with just oil, chilli, and spices, without added flavours, colours, preservatives, or flavour enhancers.
  • Cheese: Opt for freshly grated cheddar or tasty cheese instead of pre-shredded varieties, which often contain anti-caking agents.
  • Rice: Use freshly cooked or leftover plain rice rather than flavoured or microwave rice products.
