Ingredients
1cupuncooked rice
500gchicken thighdiced
1Mingle Mexican Fajita recipe base
1red onionfinely diced
1capsicumfinely diced
400gcanned tomatoes
40gcheeseshredded
1Avocadomashed
4Tbsmayonnaise
Chilli oil
Instructions
Add 1 cup of rice and 2 cups of water to a small saucepan. Bring to the boil over high heat (with lid on) and then reduce heat to low and simmer until all water has evaporated and rice is cooked (adding more water if necessary).
Heat a large oven-safe fry pan over medium-high heat and preheat your grill to high.
Slice the chicken thighs into strips. Toss with the Mingle Mexican Fajita seasoning and cook for 6–8 minutes until browned and almost cooked through.
Add the red onion and capsicum. Cook for 4–5 minutes until just tender.
Stir through the canned tomatoes and cooked rice, cooking for 2–3 minutes until everything is heated through.
Sprinkle over the shredded cheese and place under the grill for 2–3 minutes until melted and bubbling.
Meanwhile, whisk together the mayonnaise and chilli oil.
Remove from the heat and top with mashed avocado, and a drizzle of chilli mayo. Enjoy!
