Baked Bean Jaffles

A quick, budget-friendly emergency meal made from pantry staples. These jaffles are satisfying, comforting and ready in minutes.

Ingredients

  • 2 slices bread
  • 1/2 can baked beans
  • 1/4 cup grated cheese
  • 1 handful baby spinach roughly chopped
  • ¼ small red onion finely diced
  • Butter for the outside of the bread

Instructions

  • Preheat your jaffle maker or sandwich press.
  • In a small bowl, combine the baked beans, spinach and diced red onion.
  • Butter the outside of each slice of bread.
  • Place two slices of bread, butter-side down, into the jaffle maker.
  • Sprinkle a little grated cheese over each slice, then spoon on the baked bean mixture.
  • Top with the remaining cheese before placing the remaining bread slices on top, butter-side up.
  • Close the jaffle maker and cook for 4–6 minutes, or until the bread is golden and crisp and the cheese has melted. Enjoy!
