Sweet & Sour Stir Fry
This quick and tasty stir fry uses simple ingredients to give a huge flavour explosion.

Ingredients
- 500g chicken breast, sliced (Replace with 400g firm tofu for vegetarian option)
- 4 tablespoons cornflour
- 1 tablespoon extra virgin olive oil
- 160g snow peas, sliced
- 1 green capsicum, sliced
- 1 red capsicum, sliced
- 4 cloves garlic, crushed
- 4 tablespoons soy sauce (Use tamari for gluten-free option)
- 2 tablespoons apple cider vinegar
- 2 tablespoons light sweet chilli sauce (ensure it’s gluten-free and dairy-free for gluten-free, dairy-free option)
- 1 tablespoon brown sugar
- 2 spring onions, sliced
- 440g golden hokkien noodles (Use gluten-free hokkien noodles for gluten-free option)
Method –
- Place the chicken into a bowl, then add the cornflour and mix until it’s fully coated.
- Heat oil in a wok or large frying pan over medium to high heat. Once hot, pan-fry the chicken for about 3-5 minutes or until golden brown on both sides.
- Add the snow peas and capsicums. Stir-fry (with the lid on) for about 5-7 minutes or until they start to soften. Add the garlic and stir-fry for about 30 seconds or until fragrant.
- Add the soy sauce, vinegar, sweet chilli sauce, and brown sugar. Stir the ingredients together and bring to a boil.
- Meanwhile, soak the noodles in boiling water according to packet directions.
- Stir half of the spring onions and the noodles into the chicken mixture. Stir well to combine.
- Serve and top with the remaining spring onions. Enjoy!
