Southwest Salad
A low calorie, high volume salad with chicken and black beans for protein.
THE RECIPE
Serves: 4
- Total preparation time: 10 minutes
Ingredients
- 1/2 cup light sour cream (For dairy-free use dairy-free sour cream)
- 3 Tbs salsa
- 1 Tbs lime juice
- 3/4 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 200g lettuce, chopped
- 250g cherry tomatoes, chopped
- 80g corn kernels
- 120g black beans
- 100g red onion, finely diced
- 350g roasted chicken breast (Moira Macs)
- 40g light shredded cheese (For dairy-free use dairy-free cheese)
Method –
- In a large bowl combine sour cream, salsa, lime juice, cumin, garlic powder, onion powder, and a pinch of salt and pepper. Mix well.
- Add lettuce, tomatoes, corn, black beans, red onion and chicken to a large salad bowl. Toss to coat well. Stir through sauce mixture and cheese.
- Divide between bowls and enjoy!!
