Slow Cooked Beef Massaman
A hearty, healthy, delicious curry that’s easy to prepare and packs a flavour punch.

Ingredients
- 1 tsp extra virgin olive oil
- 500g chuck steak, cubed
- 2 Tbs massaman curry paste
- 500g low carb potatoes, quartered
- 1 brown onion, diced
- 1 Tbs ginger
- 1/2 tsp ground coriander
- 1 cup light coconut milk
- 200g mushrooms, sliced
- 2 cups frozen cauliflower
- 2 Tbs lime juice
- 1 Tbs fish sauce
- 400g cooked rice, to serve
- Peanuts & coriander, to garnish

Method –
- Preheat oven to 150°C.
- In a large, cast iron Dutch oven (or ovenproof pot with a lid), heat oil over medium-high heat. Brown steak then remove from pot and set aside. To the pot, add curry paste, potatoes, onions, ginger and coriander. Fry for 2 minutes, until fragrant.
- Stir in coconut milk and 2 cups water and bring to a boil. Remove from heat, add mushrooms, cauliflower, lime juice, and fish sauce, and return beef to the pot. Stir well, cover and cook in the oven for about 90 minutes.
- Serve with rice and garnish with coriander and peanuts. Enjoy!
