Sausage & Veggie Tray Bake
You’ll have this pork sausages and veggie one-tray bake on the table in 30 minutes flat!
THE RECIPE
Serves: 4
- Preparation Time: 5 minutes
- Cooking Time: 25-30 minutes
Ingredients
- 7 pork sausages
- 500g sweet potato, sliced lengthways
- 150g carrots, sliced lengthways
- 4 garlic cloves, crushed
- 100g red onion, cut into quarters
- 400g can chickpeas
- 60g basil pesto
- 4g pine nuts
- Dried basil, to serve
Method –
- Preheat the oven to 200°C.
- Add all ingredients (except pesto) to a baking tray lined with baking paper. Dollop with pesto and bake for about 20 minutes or until the sausages are cooked through.
- Remove the sausages from the tray and return the tray to the oven. Bake for a further 5-10 minutes or until the vegetables are softened.
- Top with pine nuts and basil. Enjoy!
