Roast Chicken & Cauliflower Cheese
Comforting roast chicken with cheesy cauliflower, perfect for family dinners!
THE RECIPE

Ingredients –
- 1 whole roast chicken
- 1 chicken stock cube
- 1 tsp paprika
- 1 tsp dried thyme
- 2.5 Tbs extra virgin olive oil
- 500g potatoes, diced
- 2 carrots, chopped
- 1.5 brown onions, chopped
- 1 cup water
- Half head cauliflower, chopped and steamed for ~3-4 mins
- 7g Nuttelex
- 1/2 brown onion, finely diced
- 1 clove garlic, crushed
- 1/8 tsp cayenne pepper
- 20g plain flour (Use gluten-free flour for gluten-free)
- 300ml milk (Use plant based milk for dairy-free)
- 1/2 Tbs wholegrain mustard
- 60g + 1.5 Tbs light shredded cheese (Use dairy-free cheese for dairy-free)
- 1.5 Tbs breadcrumbs (Use gluten-free breadcrumbs for gluten-free)
Method –
- Preheat the oven to 180 degrees Celsius. In a large roasting tray, place potatoes, carrots, 1 onion, and the whole chicken on top. Pat the chicken dry with a paper towel. Sprinkle with chicken stock powder, paprika, thyme, pepper, and 2 tablespoons of oil. Rub all over the chicken and vegetables until well coated.
- Bake for 1 hour and 30 minutes, adding water halfway through and moving the vegetables around to prevent sticking. Rest for about 15 minutes before serving.
- Meanwhile, heat a large frying pan over medium-high heat. Once hot, add the butter and 1/2 tablespoon of oil, then add the remaining 1/2 onion. Cook for approximately 5 minutes or until translucent.
- Add the garlic to the pan and fry for about 1 minute or until fragrant. Add the cayenne and flour, then cook, stirring, for another minute. Gradually add the milk, stirring quickly until thickened. Stir in the mustard and 60g of cheese, then season well.
- Place the steamed cauliflower in an ovenproof dish and pour the cheese sauce over it. Sprinkle with breadcrumbs, 1.5 tablespoons of cheese, and a dash of paprika. Transfer to the oven and bake for about 25 minutes until the top is golden and crisp, and the sauce is bubbling.
- Serve the chicken with potatoes, carrots, onions, and cauliflower cheese. Enjoy!
