Pumpkin Soup
A classic favourite, this easy pumpkin soup recipe is thick and creamy with maximum flavour!
THE RECIPE
Serves: 6
Ingredients –
- 1kg pumpkin, skin and seeds removed, chopped
- 1 medium brown onion, chopped
- 2 medium potatoes, peeled and chopped
- 1 large carrot, diced
- 4 cloves garlic, crushed
- 4 cups salt reduced chicken stock (For vegetarian use vegetable stock)
- 2 chicken stock cubes, crumbled
- 1/2 cup light thickened cream (For dairy-free use dairy-free cream)
- 12 slices sourdough bread (For gluten-free use gluten-free bread)
Method –
- Place all ingredients, except cream, in a large pot or saucepan. Bring to a simmer over medium heat until vegetables are tender.
- Take off heat. Using a stick blender, blend until smooth.
- Add the cream, season, and stir through. Serve with 2 slices bread. Enjoy!!
