Peri-Peri Pasta
Flavour-packed peri peri pasta bake with tender chicken, creamy cheese, and roasted veggies.
THE RECIPE
Serves: 4
Ingredients –
- 1 capsicum, diced
- 100g cherry tomatoes, halved
- 500ml chicken stock salt-reduced
- 4 Tbs peri peri sauce
- 1 packet medium peri peri rub
- 300g tomato passata
- 280g penne pasta
- 400g chicken breast, sliced
- 80g light cream cheese
- 80g shredded cheese
Method –
- Preheat the oven to 180°C (fan-forced). Add the capsicum, cherry tomatoes, chicken stock, peri peri sauce, peri peri rub, passata, and uncooked pasta to 4 glass bowls. Season with salt and pepper, then mix well.
- Wrap the bowls tightly with foil and bake in the oven for 30-35 minutes or until the pasta is cooked.
- Add the chicken and cream cheese, and stir well. Sprinkle cheese over the top and bake for a further 10 minutes, uncovered. Enjoy!
