Moroccan Chicken Salad
A high volume, nutritious and delicious salad made up of moroccan chicken, feta and tzatziki.
THE RECIPE
Serves: 4
Ingredients
- 500g chicken breast, diced
- 15g moroccan seasoning
- 750g pumpkin, diced
- 3 tsp extra virgin olive oil
- 80g baby spinach
- 1 tomato, diced
- 1 carrot, grated
- 160g cucumber, sliced
- 80g tzatziki (or hummus)
- 100g feta

Method –
- Preheat oven to 180 degrees celcius. Line 2 baking trays with baking paper and add pumpkin with 2 tsp of oil. Bake in oven for ~30 mins or until soft.
- Meanwhile, combine chicken and moroccan seasoning in a small bowl. Heat 1 tsp of oil in a large fry pan, and cook chicken for ~5-7 mins or until cooked through.
- In serving bowls, add spinach, tomato, carrot, cucumber, pumpkin and chicken. Top with feta and tzatziki. Enjoy!!
