Meatball & Pasta Bake

Ingredients
- 28 beef and pork meatballs
- 140g penne pasta
- 500g napoletana sauce
- 1 carrot, diced
- 1 brown onion, diced
- 200g mushrooms, sliced
- 1 tsp Italian seasoning
- 80g light shredded cheese
Method –
- Preheat your oven to 190°C. In a large baking dish or four glass bowls combine meatballs, pasta, napoletana sauce, carrot, onion, mushrooms, italian seasoning, and season with salt and pepper. Mix well to combine. Cover the dish tightly with aluminum foil and bake for 30-35 minutes.
- Carefully remove from the oven, stir in the shredded cheese. Return to the oven, uncovered, and bake for an additional 15–20 minutes, until the cheese is bubbly and golden. Enjoy!
