Mac & Cheese
Traditional mac & cheese turned healthy by adding protein and fibre.
THE RECIPE
Serves: 4
Ingredients
- 1 macaroni cheese box
- 400g chicken breast
- 60g shredded cheese
- 300g frozen broccoli and cauliflower
*For dairy free use vegan macaroni and cheese box and dairy free cheese
Method –
- Heat a large non-stick fry pan over medium heat. Cook chicken breasts for ~2 mins each side or until browned. Add some water to the pan (~cover 1/3 of the chicken) and cook, with lid on, for ~7-10 mins or until chicken is cooked through. Transfer to chopping board and shred chicken with 2 forks.
- Meanwhile, bring a small pot of water to the boil. Add broccoli and cauliflower and simmer for 5 mins. Drain.
- Cook macaroni cheese in microwave according to packet directions for ~14 mins. Once done, add in shredded chicken, broccoli, cauliflower and shredded cheese. Season with salt and pepper and mix well.
- Divide into 4 bowls. Enjoy!!
