Kebabs & Potato Bake
Creamy potato & bacon bake served with chicken kebabs and greens. Delish!
THE RECIPE

Ingredients
- 10 kebabs
- 400g potato, thinly sliced
- 100g brown onion, finely diced
- 60g bacon, diced
- 2 cloves garlic, crushed
- 100ml light thickened cream
- 40g light shredded cheese
- 200g green beans, halved
- 1 bunch broccolini, halved
Method –
- Bring a large pot of water to the boil. Add the sliced potato and cook for 10 minutes, or until soft. Drain.
- Meanwhile, in a large non-stick frying pan, cook the kebabs for 10 minutes, or until cooked through. Bring a small pot of water to the boil. Add the beans and broccolini, and cook for 5 minutes. Drain.
- In a small non-stick frying pan, cook the onion, garlic, and bacon for 5–7 minutes, or until browned and softened. Reduce the heat to low, then stir in the cream, salt, and pepper. Cook until the mixture thickens.
- Layer the potatoes in a baking tray or 4 glass bowls and top with the bacon mixture. Sprinkle cheese over the top. Grill for 5 minutes, or until golden.
- Serve the potato bake with the kebabs, broccolini, and beans. Enjoy!
