Egg & Bacon Casserole
This easy breakfast casserole is packed with bacon, potatoes, and cheese! It can be prepared ahead of time and is a real crowd pleaser!

Ingredients
- 175g shortcut bacon, diced
- 1 red capsicum, diced
- 6 eggs
- 1/2 cup milk
- 1.5 cups diced potatoes
- 1/2 cup light shredded cheese
- 2 spring onions, sliced
- 4 Tbs light sweet chilli sauce

Method –
- Preheat the oven to 180°C. In a large fry pan, cook bacon over medium heat, stirring occasionally. Cook until it is a nice crispy brown. Remove from heat. Add the capsicum to the fry pan and cook over medium heat until tender. Set aside.
- In a large bowl, whisk the eggs with the milk. Stir in the cooked vegetables, potatoes, and the shredded cheese. Season with salt and pepper.
- Pour the mixture into a 20x20cm oiled baking dish and top with spring onions. Bake for 30-40 minutes or until the eggs are firm and the top is slightly golden brown. Let stand for 10 minutes. Cut into squares and serve warm with sweet chilli. Enjoy!
