THE RECIPE
Serves: 12
- Total preparation time: 1 hour
Ingredients –
- 1 large ripe banana, mashed
- 1/2 cup natural peanut butter
- 1/4 tsp cinnamon
- Pinch of sea salt
- 2 tbsp rolled oats
- 100g dark chocolate (70% or higher)
- 1 tsp coconut oil

Method –
- Line a mini muffin tin with 12 mini baking paper cups.
- In a bowl, mash the banana and stir in peanut butter, cinnamon, sea salt, and oats.
- Spoon the banana mixture into each muffin liner. Flatten with the back of the spoon. Place in the freezer for 30 minutes to firm up.
- Melt the dark chocolate and coconut oil together in a microwave (in 30-second bursts, stirring in between).
- Pour melted chocolate over each frozen cup to cover the banana-peanut layer. Freeze again for at least 1 hour or until fully set.
- Once set, pop the cups out and store in a freezer-safe container or ziplock bag for up to 2 months. Enjoy!
