Chocolate Brownies
These brownies are irresistible! With only 106 calories they make a great low calorie snack/dessert.
The Recipe
Serves: 25
Ingredients –
- 200g 70% cooking chocolate (I use Plaistowe)
- 1 Tbs cacao powder
- 1/2 tsp bicarb soda
- 200g pitted dates
- 3 large eggs
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- Extra virgin olive oil cooking spray
Method –
- Preheat the oven to 180°C. In a food processor or blender, pulse the individual chocolate pieces, cacao powder and baking soda until texture of coarse sand.
- Add pitted dates and pulse. Then add eggs, melted coconut oil and vanilla and pulse.
- Spray a 20x20cm baking dish with oil transfer the batter into the dish. Spread evenly and bake for ~20-25 mins or until a skewer comes out clean. Allow to cool on a wire rack before cutting and serving into 25 pieces. Enjoy!!
