Chicken Schnitzel Panini
Light & Crispy Chicken Paninis with Fresh Veg and Sweet Chilli Mayo.
THE RECIPE
Serves: 4
Ingredients
- 4 paninis
- 500g chicken breast, sliced into 4 pieces
- 40g wholemeal plain flour
- 1 egg
- 100g breadcrumbs
- 60g lettuce, shredded
- 1 large tomato, sliced
- 60g red onion, thinly sliced
- 80g light mayonnaise
- 40g light sweet chilli sauce

Method
- Preheat oven or air fryer to 200°C. Pat the 4 chicken pieces dry with paper towel. Coat each piece in flour, then egg, then breadcrumbs.
- Place crumbed chicken on a lined baking tray and spray lightly with oil. Bake for 10–15 minutes, flipping halfway, until golden and cooked through, flipping at 10 minutes, until golden and cooked through.
- Toast or warm the panini rolls lightly if desired. Spread mayonnaise and sweet chilli sauce on each roll. Top with lettuce, tomato, red onion, and crumbed chicken. Enjoy!
