Chicken Sausage Breakfast Pita
A wholesome breakfast pita stuffed with chicken sausage, veggies, and avocado.

Ingredients
- 2 wholemeal pita breads
- 1 tomato, diced
- Handful of spinach, chopped
- 1 large spring onion, finely chopped
- 3 extra lean chicken sausages
- 60g avocado, mashed
- 1 tsp lemon juice

Method –
- Remove the chicken sausage meat from its casing and combine it in a medium bowl with the tomato, spinach, and spring onion. Season with salt and pepper.
- Heat the pita in the microwave according to the package directions. Cut the pita in half to create pockets. Stuff each pita pocket with the sausage mixture.
- Cook in a 180°C air fryer for 15 minutes, or reheat a frying pan over medium heat and cook for about 4 minutes on each side, until the sausage meat is fully cooked and the pita is golden brown.
- While the pitas are cooking, mash the avocado in a small bowl. Add the lemon juice, salt, and pepper. Serve the pitas with the avocado. Enjoy!
