Chicken Pesto Bake
This delicious Chicken Pesto Bake is a perfect weeknight meal, packed with flavours, easy to make and full of comfort.

Ingredients
- 1 cup uncooked basmati rice
- 500g chicken breast, diced
- 4 Tbs basil pesto
- 8 Tbs Greek yoghurt
- 1/2 red onion, finely diced
- 20g spinach, finely diced
- 2 cups chicken stock salt-reduced
- 24 pieces sun-dried tomatoes, chopped
Method –
- Preheat the oven to 180°C. In four separate glass bowls, combine the rice, chicken, pesto, yoghurt, red onion, spinach, chicken stock, and sun-dried tomatoes. Mix well to ensure everything is evenly combined.
- Add the glass bowls to a baking tray and bake in the oven for 40-45 minutes, or until the liquid has evaporated and the chicken is cooked through.
- Once baked, remove from the oven and let them cool slightly before serving. Enjoy!
