Chicken Noodle Stir Fry
This quick and easy stir fry incorporating Japanese flavours will be on the table in minutes!
THE RECIPE

- Total cooking time: 12 minutes
Ingredients
- 3 cloves garlic, crushed
- 1 tsp ginger, grated
- 3 spring onions, sliced
- 1 Tbs extra virgin olive oil
- 500g chicken mince
- 400g udon noodles
- 1/4 cup light soy sauce
- 1/4 cup mirin
- 2 Tbs tomato sauce
- 1 Tbs caster sugar
- 1/4 green cabbage, shredded
- 1 carrot, diced
- white sesame seeds, to serve
Method –
- Heat a wok or large fry pan over medium-high heat. Add the oil, stir-fry the garlic and ginger for 30 secs or until aromatic. Add the chicken mince and cook for ~7 mins or until browned.
- Meanwhile, place the noodles in a heatproof bowl and cover with boiling water for ~3 mins or until soft. Drain. Combine the soy sauce, mirin, tomato sauce and sugar in a small bowl.
- Add the cabbage and carrot to the wok/pan. Stir-fry for ~2-4 mins or until the cabbage is slightly wilted. Add the sauce mixture and noodles to the wok/pan and combine well.
- Divide among serving bowls and top with spring onions and sesame seeds. Enjoy!!
