Chicken & Cheese Bake
Seasoned chicken simmered in a homemade tomato sauce and topped with melted cheese.
THE RECIPE

Ingredients –
- 4 tsp extra virgin olive oil
- 4 (600g) chicken thighs
- 2 tsp Italian herbs
- 2 tsp paprika
- 2 tsp onion powder
- 1 brown onion, diced
- 4 cloves garlic, crushed
- 1 capsicum, diced
- 400g diced tomatoes
- 1 Tbs tomato paste
- 1/4 tsp chilli flakes (optional)
- 80g light shredded cheese
- Parsley, to garnish
- 1 bunch broccolini, chopped
Method –
- Preheat your oven to 200°C. Place 4 glass bowls on a baking tray for easy handling. Drizzle olive oil in each bowl to coat the bottom. Add the chicken thighs to each bowl.
- Season each chicken with paprika, onion powder, salt, pepper, and half of the Italian herbs. Rub this seasoning on all sides of the chicken breasts.
- Add in the diced onion, garlic, diced capsicum, canned tomatoes, tomato paste, chilli flakes (if using), and the remaining Italian herbs. Mix well.
- Cover the glass bowls loosely with foil and bake in the preheated oven for about 25-30 minutes, or until the chicken is fully cooked through.
- Once the chicken is cooked, remove the foil and top each chicken thigh with shredded cheese. Return the bowls to the oven and grill for 5 minutes, or until the cheese is melted and bubbly.
- While the chicken is baking, bring a pot of water to a boil and cook the broccolini for about 5 minutes, or until tender. Drain and set aside.
- Once the cheese is melted, remove the glass bowls from the oven. Garnish with fresh parsley and serve each bowl with the boiled broccolini on the side. Enjoy!
