Cheesy Scrambled Egg Tacos
The ultimate breakfast tacos, made with soft cheesy scrambled eggs, tortillas, avocado and finished with chilli oil. These are so satisfying and quick to make.
THE RECIPE

Ingredients
- 1/4 capsicum, diced
- 1 spring onion, siced
- 4 eggs
- 20g light cheese, shredded
- 4 mini tortillas
- 40g avocado, mashed
- Chilli oil and coriander, to serve

Method –
- Heat a fry pan over medium heat, add the capsicum and spring onion, saute for 2–3 minutes until softened. Lower the heat slightly, whisk the eggs with a pinch of salt and pepper. Pour them into the pan with the veg and gently push the egg with a spatula until scrambled. When the egg still looks a little undercooked, add the cheese and either fold in or leave to melt on top.
- Top tacos with avocado, scrambled eggs, chilli oil, and coriander. Enjoy!
