Burrito Bowl with Homemade Chips
A delicious and satisfying burrito bowl with a perfect mix of bold flavours and crispy crunch in every bite.
THE RECIPE

- Total preparation time: 5 minutes
- Total cooking time: 20 minutes
Ingredients –
- 2 wholegrain wraps, cut into triangles
- 2 tsp paprika
- 500g beef mince
- 1 tsp extra virgin olive oil
- 1 tsp taco seasoning
- 800g potatoes
- Spray oil
- 200g lettuce
- 2 tomatoes
- 80g red onion
- 200g avocado
- 100g light sour cream
- Coriander, jalapenos and lime, to serve
Method –
- Preheat the oven to 180°C. Add the potatoes with 1 tsp paprika, salt, pepper, and spray with oil. Toss well to combine. Bake in the oven for 20-30 minutes or until cooked through.
- Place the wrap triangles on a baking tray lined with baking paper. Spray with oil and sprinkle with 1 tsp paprika. Toss well to combine. Bake in the oven for 10 minutes or until crispy.
- Meanwhile, heat oil in a large non-stick frypan over medium-high heat. Cook the beef mince with the taco seasoning for 5-7 minutes or until browned and cooked through.
- In a serving bowl, add lettuce, tomatoes, red onion, avocado, potatoes, beef mince, and homemade chips. Top with sour cream, coriander, jalapeños, and lime. Enjoy!
