Bruschetta on English Muffins
High protein bruschetta with cottage cheese, pesto and tomato. So simple and so delicious!

- Total preparation time: 7 minutes
Ingredients –
- 6 english muffins, halved
- 4 tomatoes, diced
- 2 tsp extra virgin olive oil
- 2 Tbs fresh basil, chopped
- 60g basil pesto
- 360g cottage cheese
- Balsamic glaze, to serve

Method –
- Toast english muffins. In a small bowl, combine diced tomato, olive oil, basil and season with salt and pepper.
- Top each english muffin with pesto, cottage cheese, tomato mixture and drizzle over balsamic glaze. Enjoy!
