Berry Muffins
These muffins are gluten-free and naturally sweetened – nourishing, easy, and perfect for anytime snacking.
THE RECIPE

- Total cooking time: 18 minutes
Ingredients
- 2 cups almond meal
- 2 tsp baking powder
- 1 pinch salt
- 1/4 cup water
- 1/4 cup extra virgin olive oil
- 1/4 cup brown sugar
- 1/2 banana , mashed
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 3 eggs
- 1 cup frozen mixed berries

Method –
- Preheat the oven to 180°C. Combine all ingredients (except the berries) in a bowl and stir until well combined. Gently fold in the berries.
- Grease 12 muffin cups and divide the mixture evenly among them.
- Bake for 18–22 minutes, or until a skewer inserted into the centre comes out clean.
- Leave to cool in the muffin trays for 5 minutes before transferring to a wire rack. Enjoy!
