Barbecue Pulled Pork Bowl

THE RECIPE
Serves: 4
- Total preparation time: 5 minutes
- Total cooking time: 40 minutes
Ingredients
- 250g black rice
- 200g lettuce
- 200g refried beans
- 1 pack slow cooked pulled pork (I used Woolworths brand)
- 1 tomato, diced
- 60g corn kernels
- 60g red onion, diced
- Coriander, to taste
- 160g avocado, mashed
- Jalapeños, to taste
- 2 Tbs barbecue sauce reduced salt & sugar
- 1 lime, to serve

Method –
- Preheat the oven to 180°C (fan-forced). Cook the pulled pork according to packet directions.
- Heat rice and refried beans in microwave according to packet directions.
- To a serving bowl, add rice, lettuce, refried beans, pulled pork, tomato, corn, red onion, and coriander. Top with avocado, jalapeños, barbecue sauce and lime wedge. Enjoy!
